Upstream, an international competition brings together several hundred cuvées, all tasted blind according to a precise protocol. Each wine is judged solely on its ability to interact with the oyster, revealing the purity of its expression.

In 2025, among 244 wines from 15 countries, the Réserve Perpétuelle Brut from Champagne Philipponnat distinguished itself by winning the Grand Champion title. A recognition that honours the wine’s singular balance between freshness, tension and depth.

The blending method practised by the House, based on the historic perpetual reserve process, places each cuvée within a living continuity, where time enriches complexity without ever diminishing brilliance.

At the table, the cuisine of the Old Ebbitt Grill favours clarity of flavour. The oysters, carefully selected, each express their origin. They are accompanied by emblematic dishes such as crab cakes, lobster and grilled fish, prepared with restraint to preserve their integrity.
