An exclusive gastronomic experience at L’Arche des Vins
Over the past three years, L’Arche des Vins in Beaune, Burgundy, has established itself as a warm and engaging place for discerning wine lovers and professionals alike. Since it opened, Philipponnat has built up a loyal relationship with this wine bar, based on shared values: a preference for expressive wines, an attentiveness to good flavour, and the pleasure of sharing.
The precision of Philipponnat’s cuvées, their freshness and natural elegance, and their deep affinity with gastronomy make Philipponnat the only House whose wines are served by the glass year-round.
The collaboration between the House and the team at L’Arche des Vins will be celebrated on 19 December with an exclusive dinner orchestrated by chef Pierre Chomet. His imaginative, well-balanced cuisine provides the ideal canvas for Philipponnat’s grande cuvées. The menu presents a succession of inspired pairings, each designed to create a precise dialogue between the dishes and the personality of the wine.
An kitchen open to the dining room will allow diners to watch the chef and their team at work, adding an active, immersive dimension to the experience. Only thirty guests will have the privilege of attending this evening where gastronomy will be in perfectly harmony with the House’s great terroirs.
Food and champagne pairing menu
- Beef tartare garnished with an oyster, yuzu and homemade mayonnaise is served with Réserve Perpétuelle Non Dosé.
- Crudo de langoustine with butternut squash, Timut pepper and caviar is paired with the Blanc de Blancs 2018 Extra-Brut, whose verticality underlines the delicacy of the langoustine and the creaminess of the butternut squash.
- An unexpected moment with a revisited galette-saucisse (Breton buckwheat pancake with sausage), combined with the Blanc de Noirs 2018 Extra-Brut. This seemingly simple but remarkably precise pairing brilliantly reveals the depth of Champagne’s Pinot Noir.
- Corn-fed Landes chicken, served with salsify, truffle jus and mole condiment, finds a natural echo in the Cuvée 1522 Grand Cru Long Vieillissement 2005, whose maturity magnifies the richness of the dish.
- To finish, Alain Hess’s Brie de Meaux is paired with two expressions of the Clos des Goisses: the 2015 vintage and the Long Vieillissement 2000.
